I'm currently a LOR display person but am expanding my display into DMX and looking to see how I can better my display and learn more about the whole process.

Welcome to ACL. Changing to DMX and E1.31 will definitely open your eyes and probably save you a heap of money.
Have a look at the ACL101 if you haven't already and have a play with Xlights if you haven't already.
