I am looking to replace my show controllers with the Baldrick boards and refresh my show in the New Year, my question is, are there plans for larger output controllers.

I centralise my controllers so 32 or 48 outputs would make for any easier change-over.

Based on the platform (ESP32) & architecture they currently use they wouldn't have the capability to do 32/48 port boards. They also don't tend to talk about any plans until product release day. Their model to date is use n x 8 port controllers with a switch in a control box. If you need 48 ports F16v4 with expansions is one of the few (non fpp) options on the market.

This may sound stupid, but i never even thought about putting a small switch in a controller box......i always just envisioned running two wires.

I need a nap

The switch and n x 8 port controller option works well in a lot of cases but does cause challenges with props that use more than 8 ports on a single prop. It can often be done but you'll be having to learn shadow models etc in xlights.

Try the Hanson HE123 with expansion or TX/RX Remote Expansion - still FPP but wont be limited to 8 ports per board
its a BBB fpp Board, but it Works as it should and its a local supplier - Aussie Made and Sold

The only FPP based board I could recommend would be Kulps, the others are just a bad end-user experience generally because when things don't work quite right the support is non existent :-(

A controller that doesn't use FPP is my suggestion.
There's too many updates to FPP & bugs that happen. xLights FPP connect only supports a few of the latest versions, so you're basically forced to update every year.

My thoughts exactly, would prefer a standalone not a hat I'm too old for all the complexity of multiple programs/apps. I 'm no good at multi tasking, I can't chew chewing gum and walk at the same time. I still happily use xSchedule on a dedicated laptop to run the show.
