Hi,


I have DC-DC Buck Convertors! 12v/24v in 5v25A, what would be the maximum of these converters[font=verdana, arial, helvetica, sans-serif] could one run off a single 24v/350 watt power supply, to run 5 volt 2811 LED strips.[/font]

5v 25a is 125w . You could run a couple of these of a power supply, but I must say that is one hell of a buck converter! Just double check that is correct before designing your display around it. And I would imagine it is going to output some serious heat.
 
Running 2 would theoretically require 250W at maximum draw. I usually allow a max load of 80% on my power supplies (chinese cheap ones) so I wouldn't be tying to connect 3 of them to the PSU.
Also assume the 125W is output, there will be a small loss in the conversion, say 5-10%. (275W power draw instead of 250W)

Pixels on white draw around 60mA. Even allowing for a max 80% load will give you something like 350 pixels each if my working is correct. (700pixels per PSU)
 
WS2811 and WS2812B pixels are limited to 55.5mA each.
