Wire gauge for PSU to controller?

Trying to get my head around wire gauges etc...

What size wire should I run between PSU's and F16V3?

I have a roll of this laying around, would it be adequate?

Assuming you want to power lights through the F16v3 you would probably want 30A capable cable for connecting each side of the board to power supply

I use this cable on all my connections to PSU's and distro boards rated to 22amp@12VDC...works in my application as I run pretty much all power supplies at 350W 80-85% of their full capacity 22-24amp at 12VDC

There is a bigger version rated at 50amp and I have used this also for larger amperage and longer runs but is over engineering

Typically 10 AWG. Not de-rated, 10 AWG is generally spec-ed at 40 Amp. De-rated to 80% would be 30 Amp which is where one usually sees it breakered or fused.
